  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter for caramel
  • 1 cup brown sugar for caramel
  • ¼ cup coconut cream or non-dairy alternative for caramel
  • 1 teaspoon vanilla extract for caramel

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, and ¼ teaspoon of salt.
  3. In another bowl, cream together ½ cup softened unsalted butter and 1 cup brown sugar until fluffy.
  4. Add in 2 eggs, 1 cup of apple cider, and 1 teaspoon of vanilla extract; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture until just incorporated.
  6. Drop rounded balls of dough onto a lined baking sheet and bake for 12–15 minutes until golden at the edges.
  7. For the caramel filling: melt ½ cup butter in a saucepan, stir in 1 cup brown sugar and ¼ cup coconut cream; boil for about 3–5 minutes.
  8. Assemble by spreading caramel between two cookies.
