  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef or lamb broth
  • Fresh herbs (rosemary, thyme)
  • 2 bay leaves

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper and sear until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened. Stir in tomato paste for one minute.
  4. Deglaze with apple vinegar, scraping up browned bits from the pot. Add broth along with herbs and return lamb shanks to the pot.
  5. Cover and braise in the oven for 2-2.5 hours until tender.
