  • 1 cup semi-sweet chocolate chips
  • 4 cups cornflakes cereal
  • ½ cup unsalted butter
  • 1 cup brown sugar, packed
  • ½ cup light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt 1 cup of unsalted butter in a saucepan, then whisk in 1 ½ cups granulated sugar and 1 cup packed brown sugar until smooth. Remove from heat and stir in 4 large eggs and 2 teaspoons vanilla extract.
  3. Gradually mix in 1 cup all-purpose flour, 1 cup unsweetened cocoa powder, and 1 teaspoon salt until just combined. Fold in 1 cup semi-sweet chocolate chips.
  4. Pour batter into the prepared pan and bake for 25–30 minutes or until set. Let cool completely.
  5. For the topping, melt another ½ cup unsalted butter with 1 cup packed brown sugar and ½ cup light corn syrup over medium heat until boiling. Stir in 1 teaspoon vanilla extract and pour over 4 cups cornflakes in a bowl, mixing gently to coat.
  6. Spread the cornflake mixture evenly over cooled brownies and press down lightly. Allow to set for at least one hour before slicing.
