  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup milk
  • 1 large apple, peeled and chopped
  • ½ cup light brown sugar (packed)
  • 1 ½ teaspoons ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and flouring it.
  2. In a mixing bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream together softened butter, granulated sugar, and vanilla until smooth. Gradually add eggs one at a time until fully incorporated.
  4. Alternate adding the dry ingredients and milk to the butter mixture until just combined.
  5. Fold in chopped apples mixed with light brown sugar and ground cinnamon.
  6. Layer half the batter in the prepared pan, sprinkle with half the apple mixture, then repeat layers.
  7. Swirl gently with a knife before baking for about 45 to 55 minutes or until a toothpick comes out clean.
  8. Cool in the pan briefly before transferring to a wire rack; drizzle with glaze made from confectioners’ sugar and water.
