  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter with granulated sugar in a stand mixer until smooth.
  5. Add eggs and vanilla extract to the butter mixture and mix until combined.
  6. Gradually add dry ingredients to wet ingredients until fully mixed into dough.
  7. Shape the dough into a rectangle on a floured surface and spread the cinnamon filling over it.
  8. Roll up the dough tightly from one edge and slice into 10–12 equal pieces.
  9. Place on parchment-lined baking sheets and bake for about 9–11 minutes until lightly golden.
  10. Allow cooling before frosting with cream cheese mixture.
