  • 4 cups beef broth
  • 1 (14.5 oz) can Mexican-flavored diced tomatoes (undrained)
  • 1 (15.5 oz) can pinto beans (undrained)
  • 1 (15.25 oz) can corn (drained)
  • 1 large baking potato, peeled and cubed
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked; drain excess grease.
  2. Add chopped onion and bell pepper; cook until softened (about 5 minutes).
  3. Stir in chili powder, paprika, cumin, Worcestershire sauce, salt, and pepper; cook for another minute.
  4. Pour in the beef broth along with diced tomatoes, pinto beans, corn, and cubed potatoes; mix well.
  5. Bring to a boil then reduce heat to low; cover and let simmer for about 30 minutes.
