  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Place the raw chicken in the bottom of your crock pot.
  2. Add chopped onion, minced garlic, Italian seasoning, red pepper flakes (if using), and crushed tomatoes on top.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. Shred the chicken with forks and return it to the pot.
  6. Stir in heavy cream until well combined.
  7. If desired, thicken by mixing cornstarch with cold water and adding it to the soup.
  8. Gradually incorporate Parmesan cheese while stirring until melted.
  9. Cook uncovered for an additional 20–30 minutes.
  10. Season with salt and pepper to taste and garnish with fresh parsley before serving.
