  • 2 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 1/4 cup dry apple vinegar (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Fresh thyme leaves, salt, and black pepper to taste
  • 1 1/2 cups shredded Gruyère or Swiss cheese
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, melt butter and olive oil. Add sliced onions and cook for about 20–25 minutes until deeply caramelized. Season with salt, pepper, and thyme.
  2. If using vinegar, pour it into the skillet once onions are caramelized and cook for an additional minute.
  3. Transfer the caramelized onions to a slow cooker. Add beef broth, Worcestershire sauce, garlic powder, and meatballs; stir to combine.
  4. Cover and cook on low for 4–5 hours or on high for 2–3 hours until meatballs are heated through.
  5. Sprinkle cheese over the top. Cover again and let it melt for 10–15 minutes before serving.
  6. Garnish with fresh parsley and serve warm.
