  • 4 garlic cloves, minced

  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil (for browning)

Instructions

  1. Heat oil in a skillet over medium-high heat. Brown beef cubes in batches until golden on all sides; set aside.
  2. In the same skillet, sauté diced onion until translucent. Add minced garlic and grated ginger; cook for another minute.
  3. In a slow cooker, combine browned beef, sautéed onions, spices, coconut milk, diced tomatoes, broth, salt, and pepper. Stir well.
  4. Cook on low for 6-8 hours until beef is tender.
