  • Salt & pepper to taste
  • 1012 baby potatoes
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tbsp fresh dill (or parsley), chopped
  • 23 large eggs
  • 1 ripe avocado, sliced
  • Pinch of salt

Instructions

  1. Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, chopped dill (or parsley), salt, and pepper.
  2. Boil eggs for 7 minutes for jammy yolks or 9 minutes for firmer yolks. Transfer to ice water to cool, then peel and slice.
  3. Season the salmon fillet with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon for about 4-5 minutes per side until golden brown.
  4. Assemble on a serving plate: start with garlic herb potatoes, then add slices of soft-boiled eggs, the salmon fillet, and avocado slices with a pinch of salt.
