Ingredients

  • 6 large eggs
  • 2 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 12 medium cocktail olives (with pimentos)
  • Salt & pepper (to taste)
  • Red food dye or beet juice
  • 3 slices white bread or 12 rice crackers

Instructions

  1. Boil the eggs in a pot of water for 20 minutes. Transfer to cold water and peel.
  2. Cut each egg in half and remove yolks. Strain yolks into a bowl and mix with mayonnaise, mustard, salt, pepper, and red dye until creamy.
  3. If using bread, cut into circles and toast until crisp.
  4. Assemble by filling the egg whites with yolk mixture and placing an olive slice on top.
  5. Serve on toasted bread or rice crackers.
